VEGAN MEATLOAF
- Onion
- Carrots
- Celery
- Garlic
- Chickpeas
- Breadcrumbs
- Flaxseed
- Nutritional yeast
- Soy sauce
- Ketchup
Add the chickpeas to a bowl and mash
Sauté the onions, carrots, celery, and garlic in olive oil
Add the sautéed vegetables and remaining ingredients. Stir to combine
Press the loaf mixture down into the pan. Cover with foil and bake for 30 min
In a small bowl, mix ketchup and soy sauce for the topping
After 30 minutes, remove foil and cover loaf with topping. Bake for 15 more min
SESAME KALE
- Chopped kale
- Toasted sesame oil
- Garlic powder
- Salt
- Red pepper flakes
- Sesame seeds
Heat the sesame oil in a large pan, then toss in the kale
Add the salt, garlic, and red pepper flakes and cook for 5-7 min
Remove from heat, add sesame seeds, and serve
MASHED CAULIFLOWER
- Cauliflower
- Garlic
- Almond Milk
- Salt and pepper
Bake cauliflower and garlic in oven for 30 min
Add cauliflower, almond milk, garlic, salt, and pepper to blender. Blend until smooth
